White Chocolate Chunk Cookies!
You will need:
- 1/2 pound unsalted butter at room temperature
- 1 cup light brown sugar - packed
- 1 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 2 extra-large eggs at room temperature
- 2/3 cup unsweetened cocoa
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 1/2 pounds white chocolate - coarsely chopped
- Preheat oven to 350F
- In a large bowl, add brown sugar, white sugar, eggs, vanilla and
butter - cream
- Sift together flour, cocoa powder, baking soda and salt.
- Add dry ingredients slowly to wet ingredients and mix together -
do not over mix.
- Fold in chopped white chocolate.
- Scoop onto a greased cookie tray and flatten dough slightly - make
them as big or small as you like.
- Bake for 13 to 15 minutes - they're a crisp cookie.
- Remove from oven and let cool a few minutes on pan.
- Transfer to wire rack to cool completely.
These cookies freeze really well, if they make it that far!
