Lemon Shrimp Pizza
Serves 4 - 8
Quick and simple, this dish can be served as an appetizer or add a great
salad and turn
into a main course.  

You will need:

DOUGH:  
This recipe is quick and simple and makes a great thin crust pizza ~
makes 2 large or 4 individual pizzas.
1 3/4 - 2 cups of All-Purpose Flour
1/2 teaspoon Kosher salt
3 tablespoons olive oil
1 packet of yeast dissolved in 3/4 cup of water (follow directions on
yeast packet)

TOPPINGS:
12 oz large cooked shrimp (tails removed)
1/2 cup grated Parmesan cheese
10 - 12 slices Provolone cheese
2 oz fresh basil - rough chop
3 tablespoons olive oil
1/2 fresh lemon - squeezed

OTHER INGREDIENTS:  
corn meal - sprinkle lightly on a baking sheet

To make dough ~ In a large bowl combine  1 3/4 cups of flour and 1/2
teaspoon of salt.  Dissolve the yeast in water and let sit for 5 to 10
minutes.  Pour 3 tablespoons of olive oil into flour.  Pour yeast mixture
into flour.  Mix all ingredients together for about 3 minutes until it forms a
ball and isn't sticking to the sides of the bowl.  Add the remaining flour a
little at a time if the dough is too sticky.  On a well floured surface knead
the dough ball for 5 - 7 minutes.  Add a tablespoon of olive oil to the
bowl and place the dough back in it - make sure the olive oil covers both
sides of the dough.  Place plastic wrap over bowl, cover with a tea towel
and place in a warm, draft free area for about 90 minutes - let it rise until
the dough has doubled in size.  After 90 minutes, punch the dough and
form into a ball again - take a knife and divide the ball into 2.  You can
use the dough right away, refrigerate for up to 2 days, or freeze for a
month.   


PREHEAT OVEN TO: 450 F

  1. Roll out dough on a well floured surface with a rolling pin until it is
    approximately 1/4 inch thick - pick your shape! Place on baking
    sheet that has been lightly sprinkled with corn meal.
  2. Lightly brush dough with olive oil.
  3. Sprinkle Parmesan cheese over dough.
  4. Layer Provolone cheese over dough.
  5. Cover cheese with basil.
  6. Place cooked shrimp evenly over pizza.
  7. Place in oven on middle rack and bake for approximately 12 to 16
    minutes.
When cheese is bubbling and dough is golden brown remove pizza from
oven and brush shrimp and edges of pizza crust  with fresh lemon juice -
sprinkle any remaining over top of pizza.

Slice and enjoy!
