Featured Recipe Lemon Shrimp Pizza Serves 4 - 8 Quick and simple, this dish can be served as an appetizer or add a great salad and turn into a main course. You will need: DOUGH: This recipe is quick and simple and makes a great thin crust pizza ~ makes 2 large or 4 individual pizzas. 1 3/4 - 2 cups of All-Purpose Flour 1/2 teaspoon Kosher salt 3 tablespoons olive oil 1 packet of yeast dissolved in 3/4 cup of water (follow directions on yeast packet) TOPPINGS: 12 oz large cooked shrimp (tails removed) 1/2 cup grated Parmesan cheese 10 - 12 slices Provolone cheese 2 oz fresh basil - rough chop 3 tablespoons olive oil 1/2 fresh lemon - squeezed OTHER INGREDIENTS: corn meal - sprinkle lightly on a baking sheet To make dough ~ In a large bowl combine 1 3/4 cups of flour and 1/2 teaspoon of salt. Dissolve the yeast in water and let sit for 5 to 10 minutes. Pour 3 tablespoons of olive oil into flour. Pour yeast mixture into flour. Mix all ingredients together for about 3 minutes until it forms a ball and isn't sticking to the sides of the bowl. Add the remaining flour a little at a time if the dough is too sticky. On a well floured surface knead the dough ball for 5 - 7 minutes. Add a tablespoon of olive oil to the bowl and place the dough back in it - make sure the olive oil covers both sides of the dough. Place plastic wrap over bowl, cover with a tea towel and place in a warm, draft free area for about 90 minutes - let it rise until the dough has doubled in size. After 90 minutes, punch the dough and form into a ball again - take a knife and divide the ball into 2. You can use the dough right away, refrigerate for up to 2 days, or freeze for a month.
