
RECIPES Recipes from readers of WAVE Journey. Viv's Mom's English Scone Recipe Makes 4 - 8 Don't wait for them to cool before devouring! You will need: DRY INGREDIENTS: 2 cups of All-Purpose flour ~ plus more for rolling out. pinch of salt 1 tablespoon baking powder 1 tablespoon brown sugar *Mix dry ingredients together WET INGREDIENTS: 2 large eggs 1/2 to 3/4 cups of buttermilk *Whisk eggs and 1 1/2 cups of buttermilk together. 1/3 cup of cold butter - cubed *Use food processor or mix by hand into a crumb mixture - dry ingredients and cubed butter. *Pour egg and buttermilk mixture into dry crumb mixture - combine until it forms a ball - Do NOT overmix. *Place dough onto a lightly floured work surface, flour hands and gently pat dough into a round or square, about 3/4 inches thick. *Use a 2 inch round cutter and make about 8 to 10 rounds. *Transfer rounds to lined baking sheet. *Brush top with small amount of milk, buttermilk or cream and sprinkle with sugar. PREHEAT OVEN TO: 400 F & line a baking sheet with parchment paper. BAKE FOR 15 -25 MINUTES UNTIL GOLDEN BROWN. *Remove from oven and place on wire rack to cool. *Top with strawberry jam and whipped cream. *Enjoy!
