Viv's Lentil & Couscous Salad!

Serves: 8



You will need:

  • 2 cups cooked lentils
  • 1 cup couscous - cook according instructions (will double)
  • 1 large celery stalk - diced
  • 1 small red onion - diced
  • 2 cloves garlic - minced
  • 1 bunch parsley - chopped
  • 1 cup mini-tomatoes - halved
  • 1 tbls grainy Dijon mustard
  • 2 lemons - zest & juice
  • 1 tbls white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper


Directions:

  1. Cook couscous according to package instructions.
  2. In a small bowl mix together lemon juice, lemon zest, garlic, Dijon
    mustard, white wine vinegar, olive oil, salt, pepper.
  3. In a large bowl combine celery, onion, parsley, lentils, couscous,
    tomatoes.
  4. Pour wet ingredient mixture into dry ingredients and stir well.
  5. Enjoy!

Note: Make a day ahead and leave in refrigerator for flavors to marry.
