Goat Cheese & Walnut Panini

Serves: 2

A quick and tasty sandwich with a European flair!  

You will need:


  • 2 Ciabatta rolls - or similar firm rolls, split lengthwise
  • 6 ounces Goat cheese - slightly softened - spread a generous
    amount on the top and bottom of the rolls
  • 1/2 cup golden raisins
  • 1/2 cup toasted walnuts - toast for a couple of minutes in a skillet
    over medium-low heat
  • 4 tablespoons honey
  • pinch of kosher salt
  • freshly ground black pepper


  1. Spread goat cheese on both sides of rolls.
  2. Sprinkle toasted walnuts on bottom side of roll.
  3. Sprinkle golden raisins on top side of roll.
  4. Drizzle honey over walnut side of roll.
  5. Add pinch of salt and black pepper to honey side.
  6. Put both sides of roll back together and cook slowly until crisp -
    either use a sandwich/panini press, cast iron skillet (weigh down
    the panini with another cast iron skillet on the top) or griddle.
  7. Cook for about 6 minutes and make sure to turn panini over if
    using a skillet or griddle.
  8. Remove panini from grill and let sit for 1 minute.
  9. Open panini and place a handful of mixed greens inside - close
    back up and serve.
  10. Serve with a dip of Balsamic vinegar (optional)
