The first time I visited Acapulco, Mexico's ‘Mother of Resorts’ I had searched in vain around
our luxury hotel on Avenida Costera Miguel Aléman for true authentic Mexican food.  The
countless restaurants along this famous tourist strip, catering to the hordes of visitors,
featured only international cuisine and much altered Mexican dishes prepared to suit the
taste of North American sun-worshippers.

In the subsequent days, I discovered that the rich kitchen of Montezuma's land was to be
found only in the modest eating-places of the local people located in the working-class
districts around the Zócalo - the heart of the city.  Unlike the classy and fashionable
restaurants on the tourist strip, in the main, these small and unpretentious cafes and
restaurants kept up the traditions of Mexico's wide ranging and hot-spicy cuisine.
It was apparent that like in many third world countries, the Mexicans although enjoying their
hot appetizing foods, think them not good enough for visitors.  Many first-time tourists never
know that the sons and daughters of Cortez and Montezuma have combined the Old and
New World's cuisines and, in the process, developed a world of culinary delights.
It was no wonder then that on one of my visits to Acapulco
when I found El Jaguar, one of Acapulco's most authentic
Mexican restaurants catering somewhat to tourist tastes, I
was delighted.  Located on the Costera, in front of the Malibu
Hotel, near the Convention Centre it is a delightful eating-place
featuring a gift shop of Mexican handicrafts and a good number
of true Mexican dishes, mostly from the state of Guerrero.
Dining El Jaguar Restaurant Acapulco
Advertising itself as ‘the only Gastronomic and Cultural Centre
in the State of Guerrero’ El Jaguar offers the flavours of
southern Mexico along with live or ambient folk music and
poetry.  As well, its handicraft shop carries the richest artisan
products found in Guerrero, including jewellery, paintings,
sculptures and traditional clothing.  As my friend who was
dining with me remarked,  “El Jaguar serves the regional
cuisine of Guerrero flavoured with history and tradition.”
When visitors feast on El Jaguar’s somewhat spicy dishes, they will find that beans, tamales,
tacos and tortillas are only a small sample of the rich hot foods in that vacation land.  From
the repertoire of dishes that El Jaguar offers are: the traditional Aporreadillo, Chalupitas,
Mole, Pescado a la Talla, Pozole, Flan de Coco and numerous seafood dishes.  In this
restaurant, the words of the one who wrote ‘Mexican food excites the passion, seduces the
body, then sends one into ecstasy’ come to life.
