Mosel Rivers from Amsterdam to Trier

Pennsylvania's Brandywine Valley Wine Trail

The history of wine in Southeastern Pennsylvania started when William Penn planted the
first grapes in modern day Fairmount Park in 1684. Although his efforts failed, wine in this
region was not without hope. America's first commercial winery, the Pennsylvania Vine
Company, was established along the Schuylkill River in 1793. Since only the Alexander
grape thrived, the winery was closed in the 1820's. Although a pioneer, Pennsylvania lost its
status as a viable wine-making state. That is, until Eric and Lee miller founded Chaddsford
Winery over 25 years ago.   

Chaddsford is the oldest winery on the Brandywine Valley Wine Trail, an area consisting of
six wineries located about 45 minutes from Philadelphia.  All of these wineries are in close
proximity and can be visited in one day or spread out over one weekend to include other area
attractions and charming B&Bs.  In fact, the area is becoming increasing popular as a
girlfriend getaway.  It's also not uncommon to see limousines filled with bachelorette parties
driving from one vineyard to the next.


The most well-known stop on the wine trail is Chaddsford. Established in 1982, Chaddsford
features a gift shop, live music throughout the summer, self-guided tours, wine education
classes, and outdoor seating on the patio for customers to enjoy a picnic basket lunch. The
proprietors produce a wide variety of wines from Riesling to Sangria, but are best known for
their Chardonnay and Pinot Noir. Daily tastings are $7 and include samples of nine whites,
reds, and sweet blush wines. www.chaddsford.com.

Dining in Rio de Janeiro.

I have been to Rio de Janeiro maybe five times and what amazes me the most, after the
greatest opportunity to meet people from all walks of life, is the great choice of restaurants
and different kinds of food.
My last visit to one of the most spectacular cities in the world was last July and exactly like
every time, I spent my way back to Europe thinking that, sooner or later, I will go to live there.

With deep trust on indigenous, I started asking everybody where I could find a good place to
eat and every time the answer was a prompt: at Marius of course!  Curious by such
enthusiasm I decided to give the so-called top restaurant of the city a try.

Beautifully set in front of Leme Beach, adjoining to the worldwide famous Copacabana, it's
by no means the run-of-the-mill example of a five-star restaurant.

As soon as you reach the longed spot after a battle in Rio's traffic, you'll find yourself facing
the first hard choice of your adventure: fish or meat? In fact, apparently for the endless variety
in the menu, there are two versions of the same restaurant, one beside the other.

Featured Recipe ~ Fruity Breakfast Granola

Ingredients:
* 4 cups old-fashioned rolled oats

* 2 cups sweetened shredded coconut

* 2 cups sliced almonds

* 3/4 cup vegetable oil

* 1/2 cup honey

* 1 - 1/2 cups small diced, dried apricots

* 1 cup dried cherries

* 1 cup dried cranberries

* 1 cup roasted walnuts

Preheat oven to 350 F.

Mix the oats, coconut and almonds together in a large bowl.

Whisk together the oil and honey in a small bowl.

Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts
are coated.

Pout onto a 13 x 18 x 1-inch sheet pan.  Bake, stirring occasionally with a spatula, until the
mixture turns a nice, even, golden brown - about 45 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally.

Add the apricots, cherries, cranberries and walnuts.

Store the cooled granola in an airtight container.

Great for a healthy breakfast.  Serve with milk, yogurt or orange juice poured over.

Makes:  Approximately 12 cups

  Featured Recipe ~ Oregon Pear Croustade
by Chef Tim Garling, The Jackalope Grill, Bend, Oregon.

Oven: 400 deg. F.  Yield: two croutades.  Cooking time: 20-25 min.

Ingredients:
Pastry for two piecrusts (Pillsbury pie crusts available in grocery stores work great if you are short on
time)
3 ripe but firm Oregon Barlett pears, peeled, cored and sliced
1 T toasted slivered almonds
1 T fresh lemon juice
1/4 cup apricot preserves
2 T brown sugar
2 T cornstarch
1/4 t almond extract
1/2 t cinnamon

Topping:
2 T butter
2 T flour
1 T brown sugar
2 T sliced almonds

Procedure:
Preheat over to 400 deg. F.  Lay pastry flat on a large parchment-lined baking sheet and set aside.  
Place sliced pears in a medium bowl and add the lemon juice, almonds, preserves, brown sugar,
cornstarch, extract and cinnamon; toss well to coat pears with mixture.  Mound pears in the center of
the pastry and gather up the edges up to form a 2 inch rim of pastry around the outside.  In a small
bowl, stir together the flour, butter and brown sugar until crumbly; sprinkle over the opening of the pie
and top with almonds.  Bake for 20 to 25 minutes or until lightly browned.  Let cool for at least 30
minutes to firm up the filling before cutting.
