One of the most moving experiences we had was visiting the Anne Frank House Museum in Amsterdam. We didn't know if we were actually going to be able to make it due to time constraints, but we had a window of opportunity our first Saturday morning before leaving for Den Haag. We arrived at the museum about 10 minutes before the doors opened at 9AM. There was already a line of about 40 people waiting in the cold to get into the museum before the tour buses arrived. Put the Anne Frank House on your "must see" list for a visit to Amsterdam. Spend time along the Italian Riviera in Rapallo, Santa Margherita Ligure and Portofino. It is easy to access Rapallo by train from all areas of Italy and much easier than driving - very windy roads. Take the train (E2 each way) 4km to Santa Margherita and local bus (E1 each way), the 1.5km to Portofino. All three towns are unique and easy to walk around and explore. SSSS on your airplane boarding pass? Then this means you are in for extra security screening - can take an extra 15-30 minutes to get through security at US airports. Talk to a few different airport security personnel and ask them why you've been chosen for this extra screening and they will all give you different answers. Ranging from: "it's randomly selected by the computer", to "oh, you must be on a list for something", to "......." (silence). While we (WJ) were in Amsterdam, we took the 2.5hr train ride from Central Station to Maastricht, in the very southern part of The Netherlands, then spent the day at TEFAF, The European Fine Art Fair.
We were amazed by what we saw and heard. The galleries that attend this show keep their finest pieces of work for this event - items that may not have been seen for decades as they have been in a private collection in someone's mansion or chateau. A French fellow was looking at a rather beaten-up, antique chair and explaining to the owner of the piece that he was seeking a chair to use at his desk in his office in Paris. The chair owner explained to him which King Louis had owned it originally and where it had been in the last 60 years and that it was only E60,000.00 - or to us, that's a meager US$100,000.00. Hey, we'll take two! This is an annual event and most worthwhile for anyone with a deep appreciation for some of the world's most exquisite collector's items.

The High Sierra Sport Company luggage that we took with us on this trip was a lifesaver! Spend a day enjoying the countryside of Hungary, Slovakia and Czech Republic when you take the train from Budapest's Keleti Station to Prague's Holesovice Station.

WJ loved the Karntner Kasnudein, a regional dish of dumplings stuffed with cheese and spinach, with a brown butter and fresh sage sauce - E14.90 and to die for! FEATURED RECIPE ~ STUFFED JUMBO PASTA SHELLS

Wonderfully tasty and great for any occasion. Serves 6-8
You will need:
1/2 box of jumbo pasta shells = 18 shells 2 x lg jars of your favorite pasta sauce 1 x 15oz tub of ricotta 4oz grated parmesan cheese 1 x 10oz box of frozen spinach - shredded works best and be sure to drain (squeeze the heck out of it) once it is defrosted and before adding to recipe 2 egg yolks 1/2 tsp of chili pepper flakes - optional 2 tbls parsley 1 tsp basil 1 tsp thyme 1/2 cup of red wine - optional 1 cup grated mozzarella cheese - or Italian blend 1/2 tsp olive oil salt & fresh ground black pepper
Preheat oven to: 375F
1. Cook pasta shells according to directions on box. Add large pinch of salt and 1/2 tsp olive oil to water. When shells are cooked, remove from water and place on greased cookie tray to cool - you can spray tray with PAM or a similar product.
2. While shells are cooking, in medium sized bowl mix together: ricotta, spinach, egg yolks, parmesan cheese.
3. In a large pot, mix together pasta sauce, red wine, chili pepper flakes, basil, thyme, parsley, 1/2 tsp fresh ground black pepper, small pinch of salt - simmer for 10-15 minutes while stuffing shells.
4. Stuff cooked pasta shells with ricotta/spinach filling - should be just enough to fill 18 of the shells.
5. Spray 9"x13" baking dish with PAM, spoon enough pasta sauce on bottom of dish to cover, place all 18 stuffed shells in dish and spoon remainder of pasta sauce on top to cover.
6. Sprinkle grated mozzarella cheese on top and place on middle rack of preheated oven for approximately 30 minutes - or until sauce is bubbling and cheese is golden brown.
Serve with garlic bread and enjoy! Bon appetito...
